Pai mu tan means white peony, the national plant of China, for that reason they attribute the name pai mu tan as a tribute. The leaves of white tea pai mu tan consists of two youngest leaves of the plant and one bud that is still closed. The brew gives a yellowish color with a slightly roasted flavor.
