Indonesian cinnamon is mainly grown in Sumatra, Indonesia and its name derives from the Greek word ¨cinnamon¨which means ¨sweet wood¨. The inner bark of the tree, from which the cinnamon originates is extremely aromatic and gives a reddish - brown color. Cinnamon is a favorite seasoning and has been an important flavoring ingredient since antiquity. However its action is not limited to improving the taste because it provides beneficial substances to the body. Researchers found significant antimicrobial, antioxidant, antiinflammatory prperties related with cinnamon. In addition, studies shown that cinnamon can mimic the activity of insulin.
